Keto Muffins

1/3 cup coconut flour

1 cup almond flour

1/3 cup cocoa or cacoa powder

1/2 cup sweetner, like Monk fruit, xylitol

1 teasp cinnamon

1 teasp soda

2 teasp cream of tartar

4 large eggs

2 medium ripe avocados

15 drops liquid stevia

2 Tablesp coconut milk or cream

Mash avocados into eggs and liquid ingredients, then blend with a mixer until lumps are gone. Add dry ingredients and mix again. Don't over mix, batter will be thick. Options for additions are: walnuts, pecans, mashed banana, huckleberries or blueberries, raspberries, Enjoy mini chips, etc.

Spoon batter into cupcake liners and bake at 350 degrees for about 30 minutes or until a toothpick comes out clean. These keep well in the frig or freeze them.


Try these dehydrator raw cookies:


4 cups peeled butternut squash chopped into medium sized chunks 1 cup raisins juice of one orange 1/2 teaspoon nutmeg 1 teaspoon cinnamon 3 tablespoons raw honey

Blend the chopped squash in a food processor and transfer into a bowl. Next blend the raisins and the orange juice in a food processor and add to the squash mixture. Add the rest of the ingredients into the bowl and mix thoroughly.

Take out your ice cream scoop and scoop the mixture onto a dehydrator tray, flatten each cookie till they are one inch thick. Set the dehydrator for 100 degrees and leave in for 12 - 15 hours.

Makes 7-11 cookies.
